PURPOSE: Provided is a method for separating and purifying chitosan having high molecular weight from natural chitosan by using an ultrasonic process, which can be used for food and medical supplies. CONSTITUTION: The chitosan having high molecular weight is produced by reacting a chitosan mixture having various molecular weights with enzymes and simultaneously treating the mixture with 10-30KHz of ultrasonic waves for 10-90 minutes and repeating the separating process at least one time. The produced chitosan has an average molecular weight of 200,000-400,000.
