Process to adjust the concentration of beer wort in a brewing vessel comprises, a single ultrasonic sensor (38) which detects the concentration and volume of incoming fluid (19) in the vessel (24). The concentration (C) of the incoming fluid is determined by measuring the speed of sound in the liquid. The volume (D) is determined by the cumulative flow past the ultrasonic sensor (38). The mean concentration (Cm) of fluid (19') in the vessel is determined by linking the concentration (C) with the volume flow (D). The incoming flow is interrupted (44) when a pre-determined mean concentration Cm is reached in the wort vessel. The mean concentration (Cm) is derived by integration of the concentration value (C) of the incoming fluid with the volume flow (D) and subsequent calculation of the average value. The sound and volume flow measurements are taken continuously and simultaneously using ultrasonic emitters and detectors operating with proportional digital signals and processed by a personal computer. Wort may be drained from the lauter tun (12) to the wort vessel (24) by e.g. three outlet pipes (26,28,39) to a common feed pipe (22).
