New mutant lactic acid bacteria, useful e.g. for making fermented foods, have the pgm gene inactivated and overexpress exopolysaccharides

Mutant lactic acid bacterium (A) that overexpresses exopolysaccharides (I) has the pgm gene (for alpha -phosphoglucomutase, aGM) at least partly inactivated, is new. An Independent claim is also included for nucleic acid (II) encoding an aGM that is at least 70% identical, or 85% similar, with respect to a 307 amino acid sequence (2), reproduced.
