Process for extracting antioxidants from anaerobically fermented solid plant waste and extracts prepared thereby

Disclosed is a process for producing antioxidants, which comprises the following steps: ;(a) anaerobically fermenting plants; ;(b) separating the fermentation broth and collecting the solid residues; ;(c) extracting the collected solid residues with a suitable solvent, and collecting the extracts; and ;(d) drying the collected extracts.
