PROBLEM TO BE SOLVED: To stably produce flavorful bittern soybean-curd.;SOLUTION: The soybean-curd production assembly comprises a mixing unit 10 where a cylindrical case 11 is internally equipped with a torsional blade 12 and an injection nozzle 13 is attached downstream of the torsional blade 12, a soybean milk pump 22 for feeding the mixing unit 10 with soybean milk W1 and a coagulant pump 26 for feeding the injection nozzle 13 with a bittern as the coagulant W2, wherein the mixing unit 10 works as follows: the soybean milk W1 is spirally turned in a laminar flow condition via the torsional blade 12, the coagulant W2 is injected via the injection nozzle 13, the resulting mixture is then discharged as a soybean-curd material W3 into a vessel Y where the mixture is coagulated to a homogeneous soybean-curd texture.;COPYRIGHT: (C)2002,JPO
