PROBLEM TO BE SOLVED: To provide a method for producing a sanitary dried Guinea pepper by continuous sterilization and drying of a raw Guinea pepper.;SOLUTION: This method for producing the sanitary dried Guinea pepper comprises (1) a step of selecting the Guinea pepper, removing the calyx and aging the Guinea pepper, (2) a step of washing the surface, (3) a step of optionally sterilizing the surface of the Guinea pepper with a chemical bactericide solution, (4) a step of carrying out shredding and seeding, (5) a step of regularly sterilizing the Guinea pepper with the chemical bactericide solution and/or high-temperature and high-pressure steam, (6) a step of performing hot-air drying and freeze-drying of the Guinea pepper and (7) a step of carrying out pulverizing/forming and conversion of the dried Guinea pepper into a product. Thereby, there is no fear of causing sanitary problems posed with a conventional dried Guinea pepper by repeating washing, sterilizing and drying steps and storability and keeping quality of the raw material are improved by including a quick-freezing and storing step. The flavor and tissue feeling unique to the Guinea pepper can readily be restored by dissolving the resultant dried Guinea pepper with hot water in use and the dried Guinea pepper of excellent quality can be obtained in a large amount at a low cost by continuously carrying out the steps.;COPYRIGHT: (C)2002,JPO
