PROBLEM TO BE SOLVED: To provide a method for breeding a high alcohol-producing yeast in which the yeast that can produce an increased volume of alcohol is efficiently isolated and collected and Japanese Sake and other kinds of fermented liquors of high alcohol contents can be produced by using the isolated and collected yeast. SOLUTION: A mutant PDR3 gene is transduced and expressed whereby the objective high alcohol-producing yeast can be bred.
