PURPOSE: A process of cultivating clean bean sprouts through a series of integrated approaches containing disinfection of seeds, a mixed treatment of light and benzyladenine during imbibition, a temperature control and light treatment is provided, thereby suppressing generation of fine roots, reducing putrefaction, promoting enlargement of the lower hypocotyl and improving merchandise property. CONSTITUTION: Dried soybean seeds are soaked in 0.1% by weight of propionic acid or 0.1% by weight of acetic acid for 2 min to disinfect and then water for 5.5 hr while applying light treatment with 75 micromole m¬-2 S¬-1 of red light, blue light or a fluorescent light at 25deg.C and left alone in air for 30 min. The above procedure is repeated 1 to 3 times and then the seeds are treated with 4 to 8ppm benzyladenine solution at 20 to 25deg.C for 6 hours. The obtained seeds are used to cultivate bean sprouts.
