The present invention relates to a cooling and condensation method and apparatus that can be utilized in the case of separating and discharging condensate by cooling and condensing hot and humid air generated from the inside of a processing chamber during organic fermentation and drying treatment.;In the conventional case, since the low temperature and high temperature portions of the cooling medium are located at the front and rear positions of the cooling condensing chamber, the temperature difference between the air passing through the heat exchanger and the cooling medium is not evenly distributed over the entire stage. As a result, relatively large capacities of the heat exchanger and the cooling condensation chamber are required, and additional facilities are required.;In order to solve this problem, the present invention adopts a cooling method to maintain a constant and large temperature difference between the cooling medium and the air to be performed in the cooling condensation process over the entire condensation chamber. The high temperature and high humidity air generated during fermentation and drying in the fermentation and drying process chambers can increase the amount of condensate discharged per hour while passing through the cooling condensation chamber while greatly improving the cooling and condensation efficiency. It can be used economically in the fermentation and drying fields.
