In the production of fat- and cholesterol-reduced powdered products based on eggs with a high phospholipid content by extraction with compressed gas, the powdered starting material is treated with a solvent mixture of carbon dioxide (CO2) with 0.3-5.0 wt.% propane at 200-600 bar and +10 to +70 deg C.
