High ballast-content, health-giving bread containing hemp and/or nuts as per DE19952866 is improved by increasing the content of ballast and health-giving natural materials, e.g. hemp products and also increasing the curd and linseed oil content. High ballast-content, health-giving bread containing hemp and/or nuts as per DE19952866 contains sufficient of the following ingredients to allow for a 15.4% baking-, processing- and storage loss, the ingredients comprising, as percentages: whole-wheat and/or wheat flour (0.1-30); water (15-30); whole rye (10-20); oat bran (10-25); oat meal (0.1-15); apple fiber (1-6); wheat fiber (0.1-5); fiber (0.1-6); linseed or olive oil (0.1-2); hempseed oil (0.1-1); sunflower or other edible oil (1-3); hempseed meal (0.1-6); low-fat curd cheese (5-15); butter milk (4-12); shelled and roasted hempseed (8-20%); roasted (cashew) nuts or grain (0.1-15); fruit sugar (fructose) (0.6-2); salt (1-1.5); cider vinegar (0.4-3); and, for the dough preparation, wheat flour 'T1050' or similar (12-20); leaven (15-25); yeast (1-2); roasted bread crumbs (0.1-6); water (8-15); and wheat gluten (0.1-10).
