New cheese (I) with a natural, moulded, dried or mixed rind and with figurative elements on its surface, has the rind formed from a filamentous lattice, produced by the development of an exterior maturing flora, in which the elements are, at least partially, embedded. Also claimed is a method of producing (I) comprising gelling or coagulating a raw material consisting of milk proteins, seeding with a maturing flora capable of producing a filamentous lattice, placing the figurative elements in a non-continuous manner on the surface of the raw material, maturing in conditions favouring the development of an exterior filamentous lattice of maturing flora around the figurative elements.
