A probiotic cooked food product (I) with (a) cooked pastry, (b) filling(s) and/or (c) casing(s) comprises live or active yeast which is included in (a), (b), and/or (c). Independent claims are also included for the following: (A) a process for the preparation of (I) involving adding a probiotic composition including the yeast into raw or cooked pastry, the filling and/or the casing before it is cooked; (B) a probiotic composition including: (i) fat(s) with a melting point - 20 deg C; and (ii) 0.0001-30 wt.% live or dried yeast which is solid at ambient temperature and can withstand being cooked; (C) a process for the preparation of (B) including adding the yeast to the liquefied fat and then cooling it to solidify the mixture; and (D) the use of (B) to make a raw or cooked probiotic food product.
