The invention relates to a method and an apparatus for treating oil-bearing drupes. This apparatus for treating oil-bearing drupes is characterized in that it comprises: a) at least one device (20, 24) for treating whole drupes which prepares a physical destructuring of whole drupes with initiation of takeoff of the pulp of the drupes relative to the skins and of the nuclei, under conditions substantially preventing oxidation, in particular mainly natural antioxidants of the pulp; b) at least one device (42, 52; 110; 120, 124, 130, 134, 160, 170) for physical separation and recovery of a portion (in 100) of the pulps essentially free of the nuclei and advantageously of the skins; on the other hand (in 92, 96, 110) cores essentially free of pulp, advantageously with the skins, preferably under conditions substantially avoiding oxidation; c) at least one device (160, 170, 172, 174) for separating and recovering the oil from the pulp, essentially free from the core oil and containing the natural antioxidants of the pulp, by improving the resistance to oxidation of the pulp oil. The invention makes it possible to obtain an essentially pure pulp oil, as well as to recover the other constituents of whole drupes. The invention is preferably applied to the treatment of olives.
