PROBLEM TO BE SOLVED: To provide a method for producing a fermented-egg product excellent in quality such as taste and high in added value through actively proliferating lactic bacteria derived from the human intestinal tract in egg(s) followed by fermentation, and to provide a new egg product obtained by the method. SOLUTION: This method is characterized by comprising adding to liquid egg(s) added with a saccharide lactic bacteria derived from the human intestinal tract excluding the strains belonging to Lactobacillus acidophilus group followed by fermenting the resultant egg(s). An egg product produced by the method and an egg processed food produced using the egg product as the main material or submaterial are both provided.
