Purification method of angiotensin converting enzyme inhibitory peptides

PURPOSE:To provide a process for removing a bitter peptide in high efficiency from a solution containing an angiotensin converting enzyme inhibitihg peptide obtained by the hydrolysis of a protein originated from natural resource and useful as a hypotensor or a hypotensive food. CONSTITUTION:A solution containing a protein inhibiting an angiotensin converting enzyme is obtained by the hydrolysis of a protein with a proteinase in an aqueous medium. The solution is purified by (1) removing insoluble materials from the hydrolysis reaction liquid and adjusting the peptide concentration to =10wt.%, (2) bringing the solution into contact with a synthetic adsorbent to recover the non-adsorbed fraction and (3) washing the synthetic adsorbent with water or an aqueous solution of salt to further recover the non-adsorbed fraction.
