摘要

PURPOSE: To constitute a device so that an oil temperature can hold continuously a prescribed temperature range even if a TEMPURA (Japanese deep-fat fried food) is fried continuously by only giving continuously a comparatively small heating value. ;CONSTITUTION: In a TEMPURA pot 1 having an inclined bottom face 21 in which a handy side of a cooker becomes a shallow part, a heating device 5 is provided only in the lower side of the shallow part of the inclined bottom face 21, and by putting a new material one after another into oil of its shallow part, a temperature of oil of the part concerned tends to fall, but by concentrical heating to the part concerned by the heating device 5, the oil temperature returns immediately to its original prescribed temperature. Also, since in the front deep part, the quantity of oil is large and it does not become cool soon and the material whose fried temperature becomes high to some extent floats up on the coil and is only heated, the upper layer temperature of the oil in the deep part can hold enough a prescribed temperature range by only a convection of the oil in the shallow part heated concentrically by the heating device 5, economy of a heating value and improvement of the efficiency can coexist with each other.;COPYRIGHT: (C)1994,JPO
