PURPOSE: To obtain the purified product excellent in the emulsion characteristics in a high pigment recovery in a simple purification process comprising washing Guinea pepper oleoresin extracted with an organic solvent with water, etc. CONSTITUTION: Guinea pepper oleoresin extracted from Guinea pepper with an organic solvent is washed with 0.1-10wt.% of water or the mixture of the water with a lower aliphatic alcohol to obtain the objective purified product preferably containing hexane insolubles in an amount of $0.1wt.% and acetone insolubles in an amount of =0.5wt.% and removed in a sharp taste and a smell by a supercritical treatment.
