PROBLEM TO BE SOLVED: To provide a method for modifying binding characteristic of an odorant binding protein to enable detection chemical substances having different binding characteristic.;SOLUTION: An amino acid constituting a central pocket CP of a bovine odorant binding protein (OBPb) is substituted by another amino acid, whereby the degree of hydrophobicity of the central pocket CP is changed to modify the affinity (binding strength) of the OBPb to odorant substances. The odorant substance is bound to a plurality of kinds of OBPb having different affinities. The odorant substance is specified and determined by measuring fluorescence intensity of the plurality of kinds of OBPb.;COPYRIGHT: (C)2003,JPO
