PROBLEM TO BE SOLVED: To provide a preservation property-improving agent aiming at the improvement of the preservation property of a fresh food, especially cut vegetables or fruits, and having a safe and antibacterial activity.;SOLUTION: This method for producing the preservation property-improving agent is provided by mixing a safe natural additive chitosan having the antibacterial activity and deep sea zone water with a natural polysaccharide having a high adhesion force. As its characteristics, by coating the agent on the surface of the fresh food, it becomes possible to maintain the freshness of the food for a long time.;COPYRIGHT: (C)2004,JPO
