PROBLEM TO BE SOLVED: To improve the protein engineering of prolidase and improve microorganisms which are used in the production of enzymes for food processing and in the production of brewed foods.;SOLUTION: This invention provides a protein that comprises an amino acid sequence represented by a sequence No.2 (refer to the specification) and the prolidase activity, a prolidase gene that comprises a base sequence represented by a sequence No.1 (refer to the specification), a recombinant DNA formed by transferring the gene into a vector, a transformant or a transductant including the recombinant DNA, and a method for producing the prolidase using the transformant or the transductant.;COPYRIGHT: (C)2003,JPO
