A factor, which has activity in protecting a cell against the bacteriolytic enzyme, zoocin A, is described. The nucleic acid encoding the factor is useful in transforming GRAS (generally regarded as safe) organisms to be able to produce zoocin A without vulnerability to the activity of the enzyme itself. The resulting organisms can then be used in antibacterial compositions - particularly foodstuffs - against a range of bacteria, including Staphylococcus mutans, S. sobrinus and S. pyogenes.
