The gouging machine has an operating platform (10) to support the ham (3) during traversing between loading and discharge stations. An operating station is provided with a height adjustable groove table (13) associated with a gouging unit. A gouging tool is moved between withdrawn and advanced position, such that its tip is spaced from and extended beyond knuckle, respectively. A support structure is provided to gouging unit, which rotates about a reference unit and supports a gouging tool.
