Machine comprises a bench supporting a number of stations, each having a system for supporting the ham vertically, formed by upper and lower support points which rotate on a vertical shaft, the lower one being off-centre with respect to the shaft. Also included are a pneumatic gouge which carries out a reciprocating movement, a set of teeth to hold the ham in fixed position and an arm to withdraw the bone once it is separated from the meat.
