PURPOSE: Provided is fermented rice for increasing digesting and absorption, it is therefore useful for the elderly, infants, children and those who have gastric disorder. CONSTITUTION: The fermented rice is characteristically prepared by washing and dipping rice for 18 hours in winter, 14-18 hours in spring, summer and autumn, and 10-11 hours in midsummer, fermenting it at 35-45 deg.C for 3-5 hours without either heating or adding fermentation additives, such as yeasts, microorganisms, etc., then drying it.
