PURPOSE: A method for producing the titled high quality meat by feeding fermented citron feed to castrated Koran native cattle and then examining weight gain, feed intake and meat quality characteristics is provided. The fermented citron feed increases meat quality containing a taste and flavor and a shelf life thereof. CONSTITUTION: A yellow full-ripe citron(Citrus junos Tanaka) harvested in about September is washed with clean water two times, cut in quarter and then ground with a grinder. Thereafter, 600kg ground citron is mixed with 20kg bay salt, hermetically sealed and fermented at room temperature for 2 months or more. To produce high quality meat, 10% by weight of the citrus feed is mixed with an assorted feed for castrated Korean native cattle and fed for 145 days.
