FIELD: food and medicinal industry, preparative biochemistry. SUBSTANCE: hydrolyzate obtained from protein-containing material is cleared and defatted by its mixing with chitosan solution. Hydrolyzate pH value is brought about to 6.5, not above, by addition of hydrochloric acid solution. Method involves the use of chitosan solution in concentration 1 g of chitosan per 50-200 g of dry matters in hydrolyzate solution. Mixture is stirred up to complete distribution of chitosan solution in its and pH value of mixture is brought about to 7.5-10. After complete chitosan precipitation the sediment is separated.
