Two-sided meat or fish de-skinning assembly has first de-skinning wheel linked to second de-skinning wheel by inversion belt

A processing assembly removes skin and fat from a cadaver (2). The fish or meat is first de-skinned on one side by a first skin-removal wheel (3) and is then released to a combined conveyer belt (12) with inversion belt (13) to a second fat and skin removal (10) wheel (15). The de-skinned food is then removed from the second wheel (15) by a conveyer belt (16). The inversion belt (13) has a light sensor (14) which detects the passage of food and is linked to a control unit. Light sensors are positioned prior to the first skin removal wheel (3) which determine the length (4) and thickness (5) of the food (2) to be processed. One section of the first belt (12) has a variable-inclination hinge. Skin and other wastes are discharged by conveyer belt to a bin (11). The assembly operation is regulated by a control system.
