A meat de-skinning assembly has a transport roller (5) especially with a coarse-pitch helical profile (7). The meat de-skinning assembly has a conveyer belt (3) which feeds meat with attached skin under a profiled roller (1) to a horizontal blade which separates the meat (2.1) from skin (2.2). At the separation point meat is on contact with the profiled upper drum (1) and the skin in contact with the profiled lower roller (7).
