Production of conjugated unsaturated fatty acid ester, e.g. linoleate ester for use in food, involves isomerizing unconjugated ester with anhydrous base, treatment with phosphoric acid and separation of precipitated salt
The production of conjugated unsaturated fatty acid esters comprises: (a) isomerizing unconjugated esters of 12-22C fatty acids with at least 2 double bonds and 1-5C alcohols by treatment with anhydrous base, (b) working up the conjugated ester up by treatment with phosphoric acid, and (c) separation of the precipitated phosphate salt from the mixture.
