Removing a waste air stream (2), especially from a cooking site, comprises guiding the stream through a heat exchanger (7) which is cooled during the process by a heat storage medium. The heat storage medium is regenerated outside and/or during a period of cooling of the waste air stream. An Independent claim is also included for a device for carrying out the process comprising a fan (3, 17) for sucking the waste air stream through a grease filter (4), and a heat exchanger (7) having a heat storage medium for cooling the stream. Preferred Features: A latent heat storage medium is used as the heat storage medium, which can be regenerated using a cooling circuit. The heat storage medium is operated at a phase transition of a coolant contained in it.
