Surfaces of fibers (1) of freshly ground horse-radish are treated with a powdery preservation agent (2) such as, for example, a sulphur and citric acid powder, and are then coated with a film (3) of an edible oil. An independent claim is also included for an apparatus for treating fibers of freshly ground horse-radish preservation purposes.
