PROBLEM TO BE SOLVED: To provide a sterilizing agent capable of being used in sterilization and washing which play important roles as microorganism control measures in food production processes, and effective for sterilizing microorganisms attached to raw materials, especially fresh vegetables, for sterilizing bacteria attached to production machines, equipment, etc., and for washing and sterilizing fingers of operators, and to provide a washing agent capable of removing microorganisms derived from soil, agricultural chemicals, insecticides, etc., when cut vegetables are washed.;SOLUTION: This sterilizing agent is given by forming a buffer ethanol solution by mixing organic acids into a ethanol/water system, and adding saccharides and a vitamin to the solution. The agricultural chemical-removing edible washing agent exclusively used for the cut vegetables is given by combining the solution composed of the ethanol/water system and the organic acids with a sucrose ester together with a glucide. Sterilization efficacy of the agent is tested, and its result shows that the agent is effective, even when diluted 16 times, and further targets of the sterilization are bacteria derived from the soil and secondary contaminant bacteria caused by the production processes. The edible washing agent is, especially, permitted so that the vegetables are eaten, without being washed with water, after immersed in the agent, and further can eliminate the agricaltural chemicals and the insecticides.;COPYRIGHT: (C)2004,JPO&NCIPI
