PROBLEM TO BE SOLVED: To provide a method for processing shrimps in which shrinkage and deformation of shrimps by heating treatment is suppressed and high elastic feeling can be obtained.;SOLUTION: The method for processing shrimps comprises irradiating shrimps with electromagnetic wave and then carrying out heat treatment of the treated shrimps. In the method, the shrimps are preferably immersed in an aqueous solution of polymerized phosphoric acid salt and irradiated with electromagnetic wave, preferably having 140-185 MHz frequency.;COPYRIGHT: (C)2005,JPO&NCIPI
