PROBLEM TO BE SOLVED: To provide a droplet forming method which facilitates droplet formation within a microchannel and formation of compound droplets and multiple capsules and can deal with industrial mass production, a microchannel structure for the same, and products, such as microapsules and gels, obtained by the method.;SOLUTION: The microchannel structure is provided with a first continuous phase introducing port and first continuous phase introducing channel for introducing a first continuous phase fluid and a dispersion phase introducing port and dispersion phase introducing channel for introducing a dispersion phase fluid, a second continuous phase introducing port and second continuous phase introducing channel for introducing the second continuous phase fluid, and a discharge channel and outlet for discharging the droplets formed by the dispersion phase fluid and the continuous phase fluid. The microchannel structure for forming the droplets consists of the structure that the first continuous phase fluid and the dispersion phase fluid flow together to form a laminar flow and thereafter the second continuous phase fluid flows together with the laminar flow.
