PROBLEM TO BE SOLVED: To obtain a water-soluble citrus-based flavor hard to deteriorate, and moreover doing no harm to the flavor or appearance each of a food to be formulated therewith, by using as a starting material a cold press oil derived from citrus-based fruits. SOLUTION: This water-soluble citrus-based flavor hard to deteriorate is obtained by admixing an essence ingredient obtained by extraction from a cold press oil using a hydrous alcohol solvent with an anti-deteriorating ingredient comprising a coumarin analogue-rich fraction produced from the high-boiling fraction of the cold press oil.
