PROBLEM TO BE SOLVED: To develop a method for synthesizing a glucide or its derivative using a polypeptide having functionality participating in the chitosan hydrolytic activity according to transglycosylation and to provide a technique for efficiently synthesizing a functional new material actively utilizable in various regions such as glucide engineering, agriculture, foods and medicines.;SOLUTION: The polypeptide having the functionality and participating in the chitosan hydrolytic activity is made to act on chitosan or a compound having a structure similar to that of the chitosan. Thereby, the glucide containing one or several D-glucosamine residues or its derivative is synthesized according to the transglycosylation for a compound having a moiety for nucleophilically attacking an anomeric site of a reaction intermediate.;COPYRIGHT: (C)2004,JPO
