PROBLEM TO BE SOLVED: To provide a method for modifying the quality of meat by which sufficient water-retaining effects and softening effects are imparted thereto after heating and cooking even under an acidic condition; and to obtain an agent for modifying the quality of the meat, and a liquid for preliminarily treating the meat.;SOLUTION: The meat to be heated and cooked is preliminarily treated so as to contain a residual liquid after distillation formed at the production of a distilled liquor, and a dietary fiber.;COPYRIGHT: (C)2004,JPO&NCIPI
