PROBLEM TO BE SOLVED: To provide a collecting method comprising a new constitution for collecting the sap of Luffa cylindrica, and to provide a device for collecting the sap of the Luffa cylindrica, comprising a new structure used therefor. SOLUTION: This method for collecting the sap of Luffa cylindrica comprises cutting the stem of Luffa cylindrica at a position which is properly high from the root portion, maintaining a stem part including the cut face 81 in a state guided in a low temperature atmosphere, and collecting the sap 9 inundated from the cut face 81 of the Luffa cylindrica in a low temperature atmosphere.
