The apparatus for the extraction of volatile matter from biological materials, e.g. vegetable oils from plants, has a holding zone (1) for the material where it is exposed to microwaves so that the residual water content heats and evaporates. The steam breaks down the vegetable cells, and releases oil vapor. The heat generates a convection movement to carry the vapors upward through a connecting channel (4) into a condensation zone (2). A cooling system (3) reduces the vapor temperature, so that droplets of oil and water form on the inner wall of the condensation zone. The droplets move downward by gravity, into an outflow channel (6) and into a collection vessel (7). An overflow channel (8) carries water condensation back into the connecting channel. The oil accumulates in the vessel, to be removed through a take-off valve (9).
