A method for separating sterols from neutral substances containing sterols, the method comprising: (a) providing a hydrocarbon fraction containing neutral substances; (B) optionally washing the hydrocarbon fraction with water; (C) separating the neutral substances from the hydrocarbon; (D) evaporation fractionation of the neutral substances obtained in step (c) in order to obtain a fraction rich in sterols; (E) dissolving the sterol-rich fraction in a solvent and crystallizing the sterols in the solvent; and (f) separating the obtained sterol crystals in the solvent.
