A fructosyl amino acid oxidase that is obtainable from a culture of a strain of the genus Aspergillus, which strain selectively grows in a selective medium containing at least either of fructosyl lysine and fructosyl-Nα-Z-lysine and is capable of producing a fructosyl amino acid oxidase.
