The invention aims at making available to consumers poultry ready to be easily cut into well-presented pieces, before or after cooking, without wasting time. Therefor, the invention provides that the poultry is precut without completely separating the pieces which remain bound to the central bone carcass, the precut lines being selected in accordance with the anatomy of the poultry. The method consists in precutting the poultry by tracing the precut lines (10, 18, 20) of the wings (9), the legs (23) and the fillets (21), in cutting the joints, the tendons and the ligaments, and in detaching the precut pieces which remain bound to the carcass through the skin, the aponeurotic membrane and a minimum of flesh.
