PURPOSE: Provided are a process for purifying water soluble components, such as IgY, livetin and IgG consisting of low molecular peptides, from egg yolk lipid by using precipitation method and the use of a precipitated by-product. CONSTITUTION: The process for purifying water soluble components from egg yolk lipid comprises the steps of: obtaining egg yolk solution of which pH is regulated to pH 5.0-5.5 by adding water; adding 2-40(w/v)% of diatomite thereto then stirring them; holding the mixture for a certain period of time to obtain complex precipitates; and recovering a supernatant then obtaining water soluble components therefrom.
