PURPOSE: A production method of a premix for fresh rice noodles by aging roughly crushed rice with trehalose and grinding is provided. The produced premix is easily cooked by extrusion and gelatinization in hot water for a predetermined period of time and gives a good mouth feel to a user. CONSTITUTION: Rice is roughly crushed, added with trehalose as disaccharide, aged for 3 to 4hr and then ground to give a mixture. Thereafter, the mixture is added with 0.5 to 1.5% by weight of glycine fractioned from gluten to give a premix for fresh rice noodles.
