PURPOSE: A method for preparing a powdered chitin oligosaccharide and a food composition containing the powdered chitin oligosaccharide are provided, to improve the liver function and to prevent the liver injury. CONSTITUTION: The method comprises the steps of adding a crustacean to a hot water of 90-98 deg.C, adding a strong alkali solution and maturing it for 72 hours; washing it with flowing water; adding HCl and maturing it for 72 hours to soften the hard chitin of a crustacean; washing the obtained chitin oligosaccharide solution and treating it with an ultrasonic wave to obtain chitin oligosaccharide; mixing the obtained chitin oligosaccharide with herbs and treating the mixture with an ultrasonic wave for 24 hours; heating it for 48 hours and drying it at a temperature of 0 deg.C for about a week; pulverizing the dried one by using ultrasonic waves; and re-pulverizing the pulverized by using a pulverizer into a size of 300 mesh or less.
