PURPOSE: A method of making a dried yellow corbina(kulbi) by using jade water(okjeongsu) as a kind of mineral water is provided. The product is removed in fishy smell and inhibits the change of meat quality and color while maintaining the freshness. CONSTITUTION: A dried yellow corbina is preserved with salt, soaked in jade water for 3 to 5hr and then dried for a predetermined time. The dried yellow corbina that is preserved with jade water, can be quickly cooled to -40deg.C. The jade water is obtained by mixing water and jade in a ratio of 9:1 and settling for 5hr or more.
