PURPOSE: Chaga mushroom fish stew made by adding an extract of Chaga mushroom(Inonotus obliquus) in place of broth or water to conventional fish stew is provided. The product has characteristic taste and flavor of fish stew together with the immunization effect of Chaga mushroom. CONSTITUTION: In the process for making the titled fish stew, 500g Chaga mushroom is mixed with 20L water, heated at 100deg.C or more for 12hr and then filtered. Then, the Chaga mushroom extract is heated with onion, radish, kelp, green onion, an anchovy, rockfish bones at 100deg.C or more to give a broth, which is added with bones of fishes cultured with feed containing Chaga mushroom, bean sprouts, radish, a red pepper-based condiment, garlic, MSG, green onion, garland chrysanthemum, Flammulina velutipes or the like.
