PURPOSE: A compound for inhibiting protein saccharification and a preparation process thereof are provided, thereby effectively inhibiting saccharification of peptides, proteins and biomolecules in foods and the human body. CONSTITUTION: The compound, quercetin 3-O-alpha-L arabinopyranosyl (1→2)-beta-D glucopyranoside. for inhibiting protein saccharification is represented by formula(1) and is isolated from the ethanol extract of Eucommiae folium. The process for preparing 3-O-alpha-L arabinopyranosyl (1→2)-beta-D glucopyranoside comprises the steps of: (1) drying, pulverizing and extracting Eucommiae folium with ethanol at room temperature; (2) filtering the ethanol extract of Eucommiae folium and concentrating it under vacuum; (3) adding distilled water into the concentrate; (4) adding ethylacetate into the Eucommiae folium suspension to separate an ethylacetate layer; and (5) concentrating the ethylacetate layer, and subjecting the concentrate to chromatography.
