PURPOSE: A method for production of red pigment in meju(a lump of fermented soybeans) by Monascus pilosus is provided, thereby producing a larger amount of red pigment in meju. CONSTITUTION: A method for production of red pigment in meju(a lump of fermented soybeans) by Monascus pilosus comprises the steps of: inoculating 10 to 15%(v/w) of Monascus pilosus (KCCM 60084) into a medium; and culturing the microorganism at room temperature for 6 to 10 days, wherein the medium is prepared by adding 1 to 99 wt.% of the polished rice into the polished rice or beans; the polished rice is a grain type; and the polished rice is dipped in water for 24 hours and steamed at 121 deg. C for 60 minutes.
